Sue and Wil Heemskerk have created a Caribbean oasis in sleepy Kralendijk Bonaire. I have been dining at their restaurants for about 8 years and never tire of Wil’s creative cuisine. A two star Michelin chef, Wil’s menu is both creative and diverse utilizing a colorful palate of fresh ingredients. Most of my clients seek out fresh local fish. Wil and Sue only offer fresh fish so when you drive by and see Mahi Mahi on the menu, run, don’t walk in.
Maggie, my daughter loves their Caesar Salad with crisp romaine wrapped lovingly in procuitto and shaved aged parmesan. My favorite is the calamari salad with crisp calamari and fresh greens in a lovely Indonesian style dressing.
The garden setting is serene and the experience unrushed and relaxing.
Wil’s is open for dinner Monday – Sat. serving at 6 PM. Reservations are recommended. Leave room for dessert. It’s decadent and delicious.
